Uber Nachos

2 bags of different-colored tortilla chips

Pico de Gallo Salsa: 4 vine ripe tomatoes, seeded and chopped1/4 green pepper, finely chopped1 jalapeno pepper, seeded and finely chopped, for medium to hot heat level1 small white onion, chopped1/4 cup, 2 handfuls, cilantro leaves, finely choppedSalt

Guacamole: 2 ripe avocados, 1 tsp finely chopped onion and tomato, 1 clove / garlic minced, 1/2 tsp finely chopped jalapeño, 1 tsp finely chopped green pepper, Salt to taste

Beef and Beans Topping: 1 tablespoon extra-virgin olive oil1 pound ground sirloin3 cloves garlic, chopped1 small onion, chopped1 jalapeno pepper, seeded and chopped1 tsp tomato paste1 teaspoon salt1 1/2 teaspoons dark chili powder1 1/2 ground cumin, half a palmful2 teaspoons to 1 tablespoon cayenne pepper sauce, giving you medium to hot heat level1/2 c frozen corn1 can black beans, 15 ounces, drained
Cheese Sauce:2 tablespoons butter2 tablespoons all-purpose flour1 cup milk1/2 pound pepper jack cheese, shredded, about 1 1/2 c
1/2 pound cheddar cheese, shredded

Other toppings: Chopped iceberg lettuce, Chopped scallions, Chopped onions / tomatoes, Queso fresco or blanco, other grated cheese

Make the salsa and the guacamole.

Season / cook the meat / beans layer: Heat a medium nonstick skillet over medium high heat. Add oil, garlic, onion, peppers and corn to the pan. Saute 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, then stir in tomato paste and beans; reduce heat to low.
Preheat oven to 350.

Make the cheese sauce: In a medium sauce pot, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Remove cheese sauce from the heat.

Assemble nachos: Pour cheese sauce evenly over the massive spread of chips and top evenly with beef and beans and the pico de gallo. Grate some cheeses on top.

Bake for 10-15 mins to soften the chips and melt the cheese.
UBER NACHOS! garnish with your choice of extra toppings from the toppings list.
